Kikkoman Instant Shiro (white) Miso and Aka (red) Miso SoupReviewed by Andrea Steffy
You wouldn't guess it by a mere glance, but Miso is a soup with quite a history. Miso's origin can be traced back to fourth century China, and the written word around 800 BC. Miso wasn't introduced to Japan until the seventh century. After much refinery it became a necessary part of the samurai diet. According to Japanese mythology, Miso is a gift to mankind from the gods to assure health, longevity, and happiness. In the year 1960, Miso soup was introduced to Europe. Miso is a traditional Japanese soup, rich in taste and flavor. Some may think the taste is slightly salty, almost enough to make it an acquired taste. Generally the soup is made from a variety of either rice barley or soybeans which are left to ferment in wooden barrels anywhere from two months to as long as two years. I didn't think the Shiro Miso or Aka Miso were overly salty; in fact I found them pretty tasty. The instant soup can be a quick and tasty snack or can accompany any meal, anytime. Another added plus: Miso is simple enough for anyone to make. With most of today's society in a mindset of “So much to do, so little time”, time savers such as instant Miso soup are greatly appreciated. But this can also be the soup’s downfall: you can definitely tell that it’s instant.
